The salt marshes of Kampot are located in the very south, on the coast of Cambodia. To produce sea salt, the crystal-clear sea water of the Gulf of Thailand is channeled into artificially created, shallow basins, the so-called “salt gardens”. The sun and wind cause the salt concentration to increase until the salt crystallizes on the ground.
The fine sea salt flower is the purest and most valuable type of sea salt. It only forms into flower-shaped salt crystals on the surface of the salt marshes when there is high heat and low humidity. Due to its fragile structure, it must be harvested by hand using special salt rakes. For every kilogram of sea salt flowers, 30 kilograms of conventional sea salt are produced.
The “Fleur de Sel Marine” from Kampot is a natural product, unwashed, unrefined and without additives. But it contains a lot of taste, valuable magnesium, calcium and potassium. It tastes mild and salty and enhances dishes and ingredients in a unique, complex and elegant way. The salt crystals dissolve quickly and are therefore easily absorbed into the ingredients and can thus accentuate the characteristic taste of the ingredients.
On cold dishes, the fragile structure of the sea salt blossoms appears as a fine crunch in the mouth, a real "salt experience" that feels like the "sea". tastes good.
The sea salt flower is a slightly damp finger salt and NOT suitable for the salt mill.
